Fall in Love with These Cozy Baked Goods: My Favorite Autumn Recipes

Well friends, it is officially September here in Michigan and while it is still fairly warm here, some of the leaves are already starting to change! I may not be quite ready to decorate for fall, but I am always ready to whip up a delicious autumn recipe. I decided to gather a list of my favorite fall recipes to make it easier for my fellow bakers to find all of my sweet treats in one place. Nothing makes me happier than baking fall desserts for my family to enjoy all season long.

In fact, just this past week I enjoyed a slice of warm zucchini bread from a batch of fresh zucchinis from my garden! I love fresh baked bread and the variations you can make to give it a twist. Add in some pecans, cranberries, raisins or pumpkin spice; I’m always checking my bakery pantry to see what ingredients I can incorporate in my creations. Homemade Caramel Corn
My mother always baked us so many delicious treats each fall and Christmas and her homemade caramel corn was something we always got excited about. She would make a huge batch each year as long as I can remember, and would store it in a giant glass jar with a metal scoop. I’m sharing her recipe but tweaking it a little bit by replacing the corn syrup with raw honey!


Homemade Caramel Corn
Simple and Delicious Homemade Caramel Corn
Ingredients
- 6 Quarts Popped Popcorn
- 2 Sticks Butter
- 1/2 Tsp. Baking Soda
- 1/2 Cup Raw Honey
- 2 Cups Brown Sugar
- 1 Tsp. Vanilla
Instructions

Pop 6 quarts of popcorn

Preheat oven to 250 degrees

Melt butter in saucepan on medium heat

Add in brown sugar and raw honey and mix all ingredients until melted

Bring to a rapid boil for 5 minutes

Once ingredients boil for 5 minutes, remove from heat and add vanilla and baking soda

Slowly pour mixture over popcorn and coat evenly

Place coated popcorn in a roaster pan or spread evenly on a covered baking sheet

Bake for one hour, stirring ingredients every 15 minutes

Cool before serving

Pumpkin Donuts with Cinnamon Sugar
During one of my grocery trips to Walmart, I found a donut baking pan! I was so excited to purchase it so I could finally try homemade pumpkin donuts with cinnamon sugar! I can’t get enough of all things pumpkin in these fall months and these donuts did not disappoint!


Homemade Pumpkin Donuts with Cinnamon Sugar
These homemade pumpkin donuts with cinnamon sugar are baked and gluten free!
Ingredients
- 1.5 Cups Canned Pumpkin Puree (not pie filling)
- 4 Large Eggs
- 1/4 Cup Melted Coconut Oil
- 1.5 Cups Granulated Sugar
- 1.5 Tsp Baking Powder
- 1.5 Tsp Pumpkin Pie Spice
- 1 Tsp Ground Cinnamon
- 1/4 Tsp Ground Nutmeg
- 1/4 Tsp Salt
- 1 3/4 Cup Gluten Free All Purpose Flour (plus 2 TBS)
- 1/2 Tsp Cornstarch or Tapioca Starch
- 1 Cup Granulated Sugar (for the topping)
- 1/4 Cup Ground Cinnamon (for the topping)
- 1/2 Stick Butter (for the topping)
Instructions

Preheat the oven to 350F degrees and grease your donut pan

In a large mixing bowl, combine the pumpkin, eggs, coconut oil, sugar, baking powder, pumpkin pie spice, ground cinnamon, nutmeg, and salt and mix until smooth

Add in your flour and cornstarch and mix well until batter is smooth (will be slightly thick)

Slightly grease your baking pan with coconut oil

Fill each donut mold 3/4's full with batter

Place the donut pan in the oven and bake for 15-17 minutes or until your donut tops are golden brown

Remove donuts from the oven and let them cool on a baking rack

Begin cinnamon sugar topping by combining both ingredients together and whisking

Melt your half stick of butter in a small bowl

Dip each donut in melted butter and toss in the cinnamon sugar coating
Simple Apple Crisp
This simple and scrumptious Apple Crisp recipe is the perfect fall dessert made with just a few ingredients you may already have in your kitchen! You can use whatever apples you like, but I tend to enjoy more tart apples for baking since you’re combining them with a lot of sweet. I’ve also switched out the apples with pears, peaches, and even strawberries and rhubarb in the past!


Apple Crisp
Delicious and Simple Apple Crisp
Ingredients
- 4 Cups Sliced Tart Apples
- 2/3 to 3/4 Cups Packed Brown Sugar
- 1/2 Cup All Purpose Flour or GF Flour
- 1/2 Cup Oats
- 3/4 Tsp Ground Cinnamon
- 3/4 Tsp Ground Nutmeg
- 1/3 Cup Butter
Instructions

Heat oven to 375 degrees, arrange apples in greased cooking dish. Mix remaining ingredients and sprinkle over apples.

Bake until golden brown and apples are tender, about 30 minutes. Serve warm and if desired with vanilla ice cream or whipped cream.
Gluten Free Pumpkin Pancakes
Have you ever tried making gluten free pumpkin cake or pumpkin pancakes? A lot of the pumpkin pancake recipes I’ve found call for pancake mix, but that can be hard to come by if you’re trying to stay gluten free. This gluten free pumpkin pancake recipe is great because you will most likely have all of the ingredients already in your pantry!


Gluten Free Pumpkin Pancakes from Scratch
The best gluten free pancakes! This is a gluten free pancake recipe with a dairy-free and vegan option that is simple to make
Ingredients
- 2 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 3/4 tsp baking powder
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 cup brown sugar
- 1 egg
- 1 1/2 cups water
- 7.5 oz canned pumpkin
Instructions

Combine the flour, granulated sugar, salt, baking soda, baking powder, cinnamon, and pumpkin pie spice in a bowl.

In a separate bowl mix together the egg, brown sugar, water and pumpkin.

Combine dry ingredients with the wet ingredients. Using a soup ladle, drop spoonfulls of batter into a nonstick pan over medium heat. When the bottom side begins to brown (1 to 2 minutes), flip the pancake and cook for another minute.

Serve warm with maple syrup, whipped cream and cinnamon.
Fluffy Gluten Free Zucchini Bread
Fluffy and moist gluten free zucchini bread? Is it really possible?! You bet! And not to worry, this recipe works perfectly for all of the gluten lovers out there, as well! I have tried so many gluten free flour blends, and I have a few favorites. I’ll link them for you here and here if you’re interested in grabbing them! This is one of my favorite fall recipes for a reason – it is so delicious you’ll want to eat the entire thing from crust to crust haha


Fluffy and Moist Gluten Free Zucchini Bread

Ingredients
- 3 Cups Flour
- 1/4 Teaspoon Baking Powder
- 1 Tsp Cinnamon Spice
- 1 Teaspoon Salt
- 1 Tsp Baking Soda
- 2 Cups Sugar
- 3 Eggs
- 1 Cup Vegetable Oil (or coconut oil)
- 1/2 Cup Sour Cream
- 1 Tsp Vanilla Extract
- 2 Cups Grated Zucchini
Instructions

Preheat the oven to 350 degrees.

In a medium bowl mix the flour, baking powder, cinnamon, salt, and baking soda.

In a large bowl, beat the eggs until fluffy. Beat in the sugar, oil, vanilla and sour cream. Stir in the zucchini.

Gradually stir in the flour mixture. Beat until well mixed.

Pour into 2 greased 5-inch loaf pans. Bake at 350 for 1 hour, or until toothpick inserted comes out clean.
Best Ever Banana Bread
This banana bread recipe is a family favorite! It is so easy to throw together, and just so delicious! The best part? A simple switch can make this yummy bread gluten free! I hope you enjoy this recipe as much as we do. When I have this gluten free banana bread baking in the oven, the whole house smells divine. If you have a sweet tooth, consider making a chocolate-chip banana bread or maybe even adding some cream cheese frosting layers on top instead.


Best Ever Banana Bread
This banana bread recipe is so EASY but so DELICIOUS!! The best part? You can easily switch out the regular flour for Pillsbury’s Gluten Free blend and it’s just as yummy!
Ingredients
- 1 cup bananas
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 cup sour cream
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
Instructions

Preheat oven to 350 degrees. Grease and flour loaf pan. Mix banana, butter, sugar, eggs, vanilla, and sour cream. Add flour, baking soda and salt. Bake for 1 hour or until a toothpick comes out clean.
