Ingredients

  • 3 Cups Flour
  • 1/4 Teaspoon Baking Powder
  • 1 Tsp Cinnamon Spice
  • 1 Teaspoon Salt
  • 1 Tsp Baking Soda
  • 2 Cups Sugar
  • 3 Eggs
  • 1 Cup Vegetable Oil (or coconut oil)
  • 1/2 Cup Sour Cream
  • 1 Tsp Vanilla Extract
  • 2 Cups Grated Zucchini

Instructions

  1. Preheat the oven to 350 degrees. 

  2. In a medium bowl mix the flour, baking powder, cinnamon, salt, and baking soda. 

  3. In a large bowl, beat the eggs until fluffy. Beat in the sugar, oil, vanilla and sour cream. Stir in the zucchini. 

  4. Gradually stir in the flour mixture. Beat until well mixed. 

  5. Pour into 2 greased 5-inch loaf pans. Bake at 350 for 1 hour, or until toothpick inserted comes out clean.
