English Muffin Breakfast Sandwich

I love this simple English Muffin Recipe on my friend Lisa’s blog. If you don’t cook with sourdough, simply purchase some English muffins from the store or look up a traditional recipe!

Kid-friendly english muffins for breakfast

My boys love these simple breakfast sandwiches so they are definitely kid-approved! When the muffins are still warm, I cut them in half and add some sliced cheese and ham. I then baked some scrambled eggs in a cast iron skillet and use a biscuit cutter to create perfect egg rounds for the sandwiches. They were a huge hit!

Scramble them with some milk, salt and pepper and serve with toast or a warm biscuit, or even with some melted cheese on top! A very simple and quick breakfast!

Family Breakfast Favorite -Yogurt Parfait

Rather than buying sweetened yogurt with added sugar, we purchase plain, whole milk yogurt and sweeten it ourselves! Simple drizzle it with a bit of pure maple syrup and top with fresh or frozen berries and granola!

Pancake Breakfast Skillet

This was a fun take on traditional pancakes! I sautéed some apples in a cast iron skillet with butter, cinnamon, lemon juice and a pinch of salt until the apples were soft and caramelized.

Then I poured pancake batter over the top of the apples and baked it in the oven at 375 until the batter was set. I used this sourdough pancake recipe, but a traditional pancake batter would probably work as well!

Banana Bread

Have you tried my banana bread recipe yet? It’s a keeper and my boys couldn’t love it more. It’s delicious with butter and a hot cup of coffee.

Over Easy Eggs

Do your kids love to pop the yolk? My boys call it “the volcano” haha! Serve up some eggs with crispy breakfast potatoes and sausage. Every once in a while we have leftover steak, so I love heating it up for breakfast with eggs!

French Toast

French toast is a more decadent dessert, but if you’re using sourdough bread, local eggs and pure maple syrup, it’s most definitely better for your family!

Have you ever tried coconut French toast? After dipping your bread in the egg mixture, press the bread slice in some coconut shavings and then fry in butter. Mmmmmm it’s so good!

I typically serve this with some other protein like eggs, but it’s a fun one to make and you can get the kids involved. Simple take some corn tortillas and cut into four equal triangles. Then brush with a little oil and sprinkle with cinnamon sugar (I just make my own with about a 1/4 cup sugar to 1 TBS cinnamon).

There are so many options when it comes to pancakes, whether you add mix-ins like chocolate chips or blueberries, or a yummy topping like cinnamon applies in the fall! Crepes

My grandma always called them “egg pancakes” and she added food coloring to make them different colors! We loved them so much and my boys love them, too. Grandma always eye-balled hers and didn’t follow an exact recipe, and I do the same. I’ve linked a simple recipe for you here, though!

Sourdough Cinnamon Rolls

If you haven’t noticed already, I get most of my sourdough recipes from Lisa over at Farmhouse on Boone. Her sourdough cinnamon roll recipe is no exception!

I apologize I don’t have a photo for this, because they look just a beautiful as they taste, but Lisa has several photos and I would definitely encourage you to give them a try!

French Toast Casserole

This is one of my favorite ways to use up bread! When it’s about to go stale, cut up bread into small one inch cubes. Lay the cubes in a casserole dish and cover them with a mixture of scrambled eggs, cream or milk, maple syrup, cinnamon and a pinch of salt. Let it sit overnight in the fridge. The next morning, bake at 350 until the top is browned and the middle is set!

Healthy Breakfast Cookies

I loved these yummy pumpkin cookies I tried recently! I used coconut oil instead of butter, and 3/4 cup maple syrup instead of the sugar to make them a bit healthier. We added chocolate chips to ours but you could definitely leave them out or add nuts instead!

Biscuits and Sausage Gravy

This is another great way to use homemade English muffins, but you could use a traditional biscuit recipe as well.

Delicious biscuits and Gravy

For the gravy, brown a pound of sausage in a skillet and then add a few tablespoons of flour. Cook the flour for about a minute, then add about a cup and a half of heavy cream, salt and pepper to the sausage. Stir until it starts to bubble and get thick, then turn the heat down. It’s so delicious served over warm biscuits!
