I love to cook and bake, but it’s not always easy to take pretty pictures of food when you have three little boys waiting to eat it, haha!! Today I’m sharing how to make gluten free meatloaf! This recipe is such an easy weeknight meal, and if you want meatloaf leftovers, you may have to make extra haha

Gluten Free Meatloaf Recipe with Tangy Sauce

Since so many of you asked me for this easy gluten-free meatloaf recipe after sharing it on my Instagram stories, I decided to just post it here for you on the blog!

My Mom gave me the best gluten free meatloaf recipe when I got married, and it’s one of my husband’s favorite meals. He loves this gluten free meatloaf dish just as much as a traditional meatloaf recipe, and he always wants another slice! Don’t expect any leftovers if you make this haha

Easy and simple meatloaf recipe

Since I recently found out that I have Celiac disease, I switched out the oats in the recipe for gluten-free oats. The result? Amazing!! The meatloaf was melt in your mouth juicy, just as it was before. It’s getting easier and easier to find delicious, gluten-free substitutes.

Simple meatloaf recipe without breadcrumbs

I used gluten free oats from the Aldi “LiveGFree” brand. I have been so impressed by this brand, so far we love everything we have tried! Aldi has a lot of great gluten free substitutes from almond flour to gluten-free bread crumbs.

While the meatloaf itself is delicious, I think one of the best parts about this gluten free meatloaf recipe is the awesome sauce. It’s tangy glaze is still sweet, and I love to set the oven on broil for the last 5 minutes of bake time in the loaf pan, just so that the sauce gets a brown and bubbly texture.

Mmmmmmmm. Is your mouth watering yet? HA!

GF Meatloaf and sauce recipe

Honestly, this simple change to gluten free oats made no difference in the awesome flavor this tender meatloaf has. I hope you guys love it as much as we do! Feel free to substitute the lean ground beef for ground turkey or ground pork depending on your dietary restrictions.

SIMPLY AMAZING GLUTEN FREE MEATLOAF INGREDIENTS

2 lbs ground beef

2 eggs

1/4 cup of gluten free oats

2 tablespoon Ketchup

1 tsp Dijon Mustard

1 tsp Course Ground Mustard

2 TBS Worcestershire Sauce (be sure it says gluten free!)

1 TBS Minced Onion

2 teaspoon salt

1/2 tsp pepper

SIMPLY AMAZING GLUTEN FREE MEATLOAF SAUCE INGREDIENTS

1/2 cup brown sugar

1/4 cup ketchup

2 TBS BBQ sauce (we love Sweet Baby Ray’s)

2 TBS Honey

SIMPLY AMAZING GLUTEN FREE MEATLOAF DIRECTIONS

Whisk the egg, ketchup, mustards, oats, Worcestershire sauce, salt, pepper, and minced onion together in a large mixing bowl with a fork.

Add the ground beef and use your fork to incorporate. Be careful not to overwork, mixing too much can result in tough meat mixture.

Using your hands, form the mixture into a loaf and place on a cookie sheet. You can use parchment paper to prevent sticking.

Bake at 350 degrees for 50 min.

While the meatloaf is in the oven, mix the sauce/glaze ingredients together.

Remove meatloaf from the oven, skim off the fat, and pour the sauce over the top.

Bake for 10 more minutes.

Ingredients

  • 2 lbs ground beef

  • 2 tbsp gluten free Worcestershire sauce
  • 1 tbsp minced onion
  • 1 tsp salt
  • 1/2 tsp pepper

Sauce

  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 2 tbsp barbecue sauce
  • 2 tbsp honey

Instructions

  1. Whisk the egg, ketchup, mustards, oats, Worcestershire sauce, salt, pepper, and minced onion together in a mixing bowl with a fork.

    Add the ground beef and use your fork to incorporate. Be careful not to overwork, mixing too much can result in tough meatloaf.

    Using your hands, form the mixture into a loaf and place on a cookie sheet.

    Bake at 350 degrees for 50 min.

    While the meatloaf is in the oven, mix the sauce ingredients together.

    Remove meatloaf from the oven, skim off the fat, and pour sauce over the top. 

    Bake for 10 more minutes or until meat reaches an internal temperature of 160 degrees Fahrenheit.

    For all you moms who love to prep meals ahead of time, you can mix this up, form it into the loaf and freeze it. I usually put it on a cookie sheet to freeze and once it’s frozen I place it in a freezer bag. I like to do several at a time to have on hand for quick and easy meals! Once thawed, bake as instructed. 😊 Love, Mom

    The best and easiest meatloaf recipe I’ve tried in past 25 years. Used to hate making and baking them as I’d have to buy very lean meat that wouldn’t produce much grease while baking in a very tight bread pan. But now it’s easy to pour off grease, top with sauce and then it’s nearly done! Very tender and flavorful no matter what type of beef is used. I used an uncoated cookie sheet the first time and clean up was a pain since I forgot to oil it first, but it tasted so good that I reminisced about the meal as I soaked and scraped 🙂 Making it again tonight on an oiled pan… Thanks for great recipe!

    I have made this several times and it is my new favorite meatloaf!
    I noticed for the first time that the amount of salt is listed in one spot as 1 teaspoon and in another spot as 2 teaspoons. I’m wondering which is correct.

    I’ve made this meatloaf twice now and my husband goes crazy for it, he says it is the best meatloaf he has ever had and I completely agree. I don’t even like meatloaf but I gave this one a try and I could eat the whole thing, it’s that good! So, I guess I do like meatloaf haha! Thank you so so much for sharing this!

    Okay, I watched your video of this meatloaf recipe and I wanted to give it a try! I just happened to have 2 lbs of ground beef in the fridge I needed to do something with! The only meatloaf I like is my mother in law’s, so I didn’t have high hopes that I would like it. 🥴 I LOVED IT!!!! My husband said he liked it even better than his stepmom’s!! WHAT?!?
