Simply Amazing Gluten Free Meatloaf

Since so many of you asked me for this gluten-free meatloaf recipe after sharing it on my Instagram stories, I decided to just post it here for you on the blog!
My Mom gave me this recipe when I got married, and itβs one of my husband’s favorite meals. He looooves this meatloaf!

Since I recently found out that I have Celiac disease, I switched out the oats in the recipe for gluten free ones. The result? Amazing!! The meatloaf was melt in your mouth juicy, just as it was before.

I used gluten free oats from the Aldi “LiveGFree” brand. I have been so impressed by this brand, so far we love everything we have tried!
While the meatloaf itself is delicious, I think one of the best parts about this gluten free meatloaf recipe is the awesome sauce. It’s tangy yet sweet, and I love to set the oven on broil for the last 5 minutes of bake time, just so that the sauce gets brown and bubbly.
Mmmmmmmm. Is your mouth watering yet? HA!

Honestly, this simple change to gluten free oats made no difference in the awesome flavor this meatloaf has. I hope you guys love it as much as we do!

SIMPLY AMAZING GLUTEN FREE MEATLOAF INGREDIENTS
2 lbs ground beef
2 eggs
1/4 cup of gluten free oats
2 TBS Ketchup
1 tsp Dijon Mustard
1 tsp Course Ground Mustard
2 TBS Worcestershire Sauce (be sure it says gluten free!)
1 TBS Minced Onion
2 tsp salt
1/2 tsp pepper
SIMPLY AMAZING GLUTEN FREE MEATLOAF SAUCE INGREDIENTS
1/2 cup brown sugar
1/4 cup ketchup
2 TBS BBQ sauce (we love Sweet Baby Ray’s)
2 TBS Honey
SIMPLY AMAZING GLUTEN FREE MEATLOAF DIRECTIONS
Whisk the egg, ketchup, mustards, oats, Worcestershire sauce, salt, pepper, and minced onion together in a mixing bowl with a fork.
Add the ground beef and use your fork to incorporate. Be careful not to overwork, mixing too much can result in tough meatloaf.
Using your hands, form the mixture into a loaf and place on a cookie sheet.
Bake at 350 degrees for 50 min.
While the meatloaf is in the oven, mix the sauce ingredients together.
Remove meatloaf from the oven, skim off the fat, and pour the sauce over the top.
Bake for 10 more minutes.
That’s it! How easy is that?

For all you moms who love to prep meals ahead of time, you can mix this up, form it into the loaf and freeze it. I usually put it on a cookie sheet to freeze and once itβs frozen I place it in a freezer bag. I like to do several at a time to have on hand for quick and easy meals! The best and easiest meatloaf recipe I’ve tried in past 25 years. Used to hate making and baking them as I’d have to buy very lean meat that wouldn’t produce much grease while baking in a very tight bread pan. But now it’s easy to pour off grease, top with sauce and then it’s nearly done! Very tender and flavorful no matter what type of beef is used. I used an uncoated cookie sheet the first time and clean up was a pain since I forgot to oil it first, but it tasted so good that I reminisced about the meal as I soaked and scraped π Making it again tonight on an oiled pan… Thanks for great recipe!

I have made this several times and it is my new favorite meatloaf!
I noticed for the first time that the amount of salt is listed in one spot as 1 teaspoon and in another spot as 2 teaspoons. I’m wondering which is correct.

Iβve made this meatloaf twice now and my husband goes crazy for it, he says it is the best meatloaf he has ever had and I completely agree. I donβt even like meatloaf but I gave this one a try and I could eat the whole thing, itβs that good! So, I guess I do like meatloaf haha! Thank you so so much for sharing this!
