Simple Gluten Free Oatmeal Raisin Cookies

These cookies are slightly crunchy on the outside yet chewy on the inside! The warm cinnamon and nutty flax seeds make these cookies perfect for fall!

Ingredients

  • 1 1/3 cups gluten free oats rolled oats or quick cooking
  • 1/3 cups gluten free flour
  • pinch of salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla
  • 6 TBS butter
  • 3/4 cup brown sugar
  • 3/4 cup raisins
  • 1/3 cup flax seeds

Instructions

  1. Beat the butter and brown sugar until smooth

  2. Add the egg and vanilla and blend until combined

  3. In a separate bowl, mix the oats, flour, baking powder, baking soda, cinnamon and salt. 

  4. Add the dry ingredients to the wet ingredients, then fold in the raisins and flax seeds. 

  5. Preheat your oven to 350 degrees and line your baking sheet with parchment paper. 

  6. Once your oven is preheated, use a tablespoon measuring scoop to form 1 inch balls of dough, then place them about an inch apart. 

  7. Bake in the center of your oven for 12-14 minutes and allow them to cool 2 minutes on your baking sheet before moving them to a cooling rack.
