Quick Brats with Roasted Potatoes & Green Beans

Ingredients

  • 4 –6 bratwursts
  • 1.5 lbs potatoes cubed (1-inch pieces)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder optional
  • 1 lb green beans
  • ¼ red onion thinly sliced

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with olive oil, salt, pepper, and seasoning.
  3. Roast for 25–30 minutes, flipping halfway.
  4. Cook brats on grill or stovetop until fully cooked (about 15 minutes).
  5. Sauté or steam green beans until tender, then toss with sliced red onion.
  6. Serve everything warm.

Notes

  1. Skip buns for a lighter meal.
  2. Add mustard or sauerkraut if desired.
