Oven Roasted Whole Chicken with Crispy Herbed Skin

This delicious, oven roasted chicken has an herby, crispy skin yet the meat is still juicy and mouth watering every time I make it!

  • 1 whole chicken
  • 2 tbsp coconut oil
  • 1 tsp Himalayan pink salt
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp pepper


  1. Preheat oven to 425

  2. Remove giblets from the chicken cavity

  3. Pat dry chicken with paper towels

  4. Place chicken, breast side down, into a 9x13 dish

  5. Brush chicken with coconut oil and seasoningsĀ 

  6. Flip chicken (breast side up) and repeatĀ 

  7. Place chicken in the oven for about 1 hour or until the internal temperature reaches 165 degreesĀ 

  8. Allow chicken to rest 10-15 minutes

  9. Serve and enjoy!
