This gluten free, dairy free chowder is the perfect meal for chilly night. It’s rich and creamy and so satisfying that you would never know it’s missing dairy!
Heat olive oil in a dutch oven over medium heat. Stir in onion and celery, cover and reduce heat. Cook 6 minutes until softened.
Add corn. Cover and cook 5 minutes longer. Stir in flour, cook stirring 1 minute.
Add broth, potatoes, salt, pepper and bay leaf. Bring to boil, reduce hear, cover and simmer 15 minutes or until potatoes are tender.
Stir in lobster (or crab) meat, coconut milk and green pepper. Simmer 5 minutes more.
